These are known as Pousse Cafes. Some more recent shooters like B52s can also be layered.
Found a great site that not only gives some traditional and not so traditional combinations, but a chart with the specific gravities of a wide number of liqueurs so that you can create your own rainbow.
Don’t rush your pouring (one of those little pour spouts on the bottles is useful). Most of these will settle out into their stripes given time. If you want to serve them with coffee after a meal, get them ready ahead of time for the clearest lines.
Your question made me feel a little old…the Pousse Cafe was featured on those placements with all the cocktails back in the ’70s.

Doesn’t have to be 3; I’ve seen ones with 5 or 6 layers. They are called “Pousse Cafes”.
Don’t be a jerk and ask for one in a bar – they take way too long if the bartender even has the skills and equipment to do it. They are a neat party trick, if you want to make them for house guests or something, that’s cool.
B52, mind eraser, Buttery Nipple, Stop Light, Dirty Oatmeal, Slippery Nipple, and many more are all layered drinks/shots.
